Eat Like Austen: Bean & Bacon! | Regency recipe from Beth!

Beth is back with another Eat Like Austen post for this year's Austen in August! You can find the Beth's take on the recipe below, as well as a catch-all link to Beth's past posts!


The Regency period recipe "To dress Beans and Bacon" comes again from Hannah Glasse's cookbook. The original recipe is a bit different- calling for boiling dried beans, then boiling bacon (presumably a thick slice of pork belly/loin), draining the beans, skinning the bacon (then adding raspings of bread and browning the bacon under a hot iron), then serving it with parsley and butter.
Ain't nobody got time for that!
So I've simplified this side dish (which is fantastically filling comfort food) to suit modern convenience and time constraints.
